Chicken "Fried" Steak

I've gotta make this quick - Glee is on soon!!!

Chicken "Fried" Steak



Ingredients
  • 1 lb. pre-tenderized eye of round steak
  • 1 1/4 cup pepper
  • 1 tbsp. ground black pepper
  • 1/4 tsp. salt
  • 3 eggs
  • 3 tbsp. milk
  • vegetable oil
Directions 

1. Combine flour, pepper, and salt in a rectangular baking dish.  Stir with fork until mixed well. 
2. Whisk eggs and milk together in a large bowl.

Set up stations for easy breading!


3. Dip steaks in egg mixture.  Allow excess to drip off.  
4. Dredge in flour.
5. Return floured steak to egg mixture.  Coat completely and allow excess to drip off.
6. Dredge in flour.  
7. In a large skillet, add enough oil to coat the bottom and heat over medium high heat.  Once oil is hot, brown steaks on both sides (apx. 2 minutes per side).
8. Place steaks onto a wire cooling rack coated with cooking spray.  Place rack onto a foil lined baking sheet.

All ready to go into the oven!

 
9. Bake at 350 for 40 minutes.
